Rich, creamy Vietnamese egg coffee comes to Hayward

It’s rich and creamy, thick and eggy – no it’s not a breakfast scramble, but ca phe trung otherwise known as Vietnamese egg coffee.

And now it’s in downtown Hayward, thanks to the June opening of Tram Cream Coffee. The local chain focuses on egg coffee, cold-brew fruit teas and Vietnamese bites like fish cake and banh mi. There are about half-a-dozen of these shops in the Bay Area, including in San Jose and Sacramento, and each has its own numerical moniker: The full name of this one is Tram Cream Coffee Hayward Station 6.

What, exactly, is ca phe trung? According to that indubitable source, Wikipedia, it originated in Hanoi and is “traditionally prepared with egg yolks, sugar, condensed milk and robusta coffee. The drink is made by beating egg yolks with sugar and condensed milk, then extracting the coffee into the cup, followed by a similar amount of egg cream, or egg yolks which are heated and beaten, or whisked.”( Sounds perfect for a keto diet.)

Tram Cream’s signature drinks include the Egg Coffee with condensed milk, egg cream and coffee jelly ($6.50). The coffee is brewed in a phin filter, those little metal urn-shaped traditionally used in Vietnam. There are variations like a “Green Gems” with matcha foam and young-rice flakes and Tiramisu Cream Latte with shortbread, cheese foam and cacao powder ($6.75). These drinks can be customized for sweetness level, and have add-ons like honey boba, coconut cream and “rainbow jelly.”

The fruit teas come in flavors like peach-orange and lychee and “Running Dragon” with red dragonfruit. They can be mixed with fruit jams like pineapple, peach and mango. There are also milk teas with boba or avocado foam and a coconut-avocado smoothie with fresh avocado.

The Hayward location is so new food ordering doesn’t appear as an option online. But grayed-out options suggest it might soon prepare Vietnamese Rolled Rice Paper with beef jerky and quail egg, Fried Fish Cake with Vietnamese coriander and Corn Sticky Rice with mung beans and fried onions.
